Deep Fried Rabbit Food:
Hello everyone to my first installment of Super Foods Sundays. Each Sunday we will highlight a home cooked dish that will knock your socks off and make your family and friends think you're a gourmet chef. These recipes are great to start off in a new home, so why not ask me how you can get into your next dream home today. Without further ado, here is one of my favorite recipes I've concocted over the years. I guarantee it will not disappoint. Feel free to substitute ingredients as needed...

Ingredients:
- 3-4 red and yellow potatoes
- 5-6 multicolor baby carrots
- 5-6 asparagus
- 5-6 mid-size Brussels sprouts (adjust as needed based on size)
- 1 ear of corn (or half a can of corn or half a bag of steamed corn)
- 1 mid-size broccoli
- 1 mid-size cauliflower
- 1 medium onion (optional)
- 3-5 garlic cloves (flavor as desired)
- 10 green beans
- 3-5 tbsp extra virgin olive oil (cold pressed, can be seasoned olive oil for extra kick)
- Salt (optional)
- Seasonings (optional)
- Parmesan cheese (as desired)
Instructions:
-
Preparation:
- Cut and/or dice all the vegetables into bite-sized pieces.
- If using an ear of corn, remove the kernels from the cob.

-
Cooking:
- Place all the prepared vegetables into a large saucepan.
- Drizzle the vegetables with olive oil, making sure not to use too much as olive oil is very calorie-dense.
- Add salt and seasonings to taste.
- Hand mix the vegetables thoroughly to ensure even coating of the olive oil and seasonings.

-
Sautéing:
- Begin to sauté the vegetables over medium heat until they become soft. This process should take between 7 to 10 minutes, but it can vary based on the quantity of vegetables.
- If cooking a large amount of vegetables, use a cover to help steam and cook them evenly.

-
Optional Air Frying:
- For an extra crisp texture, transfer the sautéed vegetables to an air fryer.
- Air fry the vegetables for a few minutes until they achieve your desired level of crispiness.
-
Finishing Touch:
- Once the vegetables are cooked to your preference, sprinkle with Parmesan cheese to taste.
- Serve immediately.

Optional Additions:
- For a heartier meal, consider adding cooked noodles, chicken, or bacon. These ingredients can enhance the dish and add more variety.
